If you’re looking for a versatile and crowd-pleasing snack, charred corn and black bean nachos might be just the answer. This dish combines crispy tortilla chips with a medley of flavors, including melted cheese, smoky corn, and spicy jalapeños. The beauty of this recipe lies in its adaptability, allowing you to personalize it with your favorite ingredients like tomatoes, avocado, or additional spices for an extra kick.

To prepare this delicious dish, start by removing the kernels from two ears of corn. Heat a large frying pan over high heat and char the corn for five to ten minutes until they develop a deep, smoky flavor. Transfer the charred corn to a bowl. In the same pan, heat two tablespoons of vegetable oil and add 200g of drained black beans along with half a teaspoon of lightly crushed cumin seeds. Season with sea salt and freshly ground black pepper, then cook the beans for about five minutes until they become slightly crisp and begin to pop.

Next, combine the cooked beans with the charred corn. Add the zest of one lime and the juice of one and a half limes to the mixture, then toss with most of the chopped coriander and two finely chopped, deseeded jalapeños. Adjust the seasoning with more lime juice, salt, or pepper to taste.

Turn on the grill to high. Spread 200g of tortilla chips evenly across a baking tray, topping them with 75g of grated mozzarella and 100g of grated mature cheddar. Place the tray under the grill for a few minutes, watching carefully to ensure the cheese melts without burning. Once the cheese is bubbly, transfer the nachos to a serving platter. Spoon the corn and bean mixture over the chips, adding dollops of sour cream and finishing with the remaining coriander and jalapeños.

These nachos can be easily modified to suit your taste. For a burst of freshness, add diced ripe tomatoes or serve with a side of guacamole. You can also introduce more depth of flavor by incorporating spices like smoked paprika or crushed coriander seeds into the bean mixture. This simple yet flavorful dish is perfect for sharing with family and friends.
